
Taco Soup
This is an old school recipe that was making the rounds of WW meetings since back in the day. It is a classic for a reason! I have included the ingredients. Feel free to change things up and make it your own. As of 7/8/26, this is 1 point a serving.
Ingredients
- 64 ox V8 Original Or your favorite tomato or vegetable juice
- 15 oz corn I like shoepeg corn for this!
- 15 oz black beans
- 15 oz chickpeas
- 15 oz petite diced tomatoes
- 2 lbs lean grouping beef Ground chicken breast is good too!
- Taco seasoning to taste If using packets, plan for 2-3.
Instructions
- Brown and drain the ground beef. Toss it in a large soup pot or crockpot, along with all the other ingredients. Let it simmer on the stove for a while or set the crockpot on low for 4 hours. This soup can be enjoyed as soon as it has warmed up but it is a better after a period of simmering. The ingredients need a chance to get to know each other!Garnish with sour cream, shredded cheese, and corn chips. Just be set to count the additional points for whatever toppings you choose!
